10 Foods I Want To Cook In Bulk

I’ve really wanted to try the Once A Month Cooking (also known as Freezer Cooking) for a while. Since I’m totally new at this I’m starting slowly and cooking only a few things at a time. (And hopefully I can make it only once a month!)

Here are ten foods I’d like to start cooking in bulk:

1. Whole Wheat Pancakes.

I think these are healthier choices than cereal and toast every morning. We also love them for dinner too. (With grilled kielbasa. Yum!!) I usually make them with flax as well. Mike will only eat plain ones but the girls and I like banana and blueberry so we’re getting some fruit in there too. You can look up whole wheat recipes on Cooks.com or Allrecipes.com. I want to make a huge batch of them and then freeze them in smaller portions. When we want a pancake I can just take it out of the freezer and defrost it!

2. Whole Wheat/Grain Waffles.

I got a waffle maker for Christmas a couple of years ago and have used it once.  Waffles are a fun alternative to pancakes and I like them for all the same reasons I like pancakes!

3. Homemade Granola Bars.

I haven’t found a recipe I just love yet but I’m going to keep trying. The ones posted at Kitchen Stewardship sound great so these will be the ones I try next. The last batch I made (with chocolate chips) tasted like dessert so I wasn’t convinced it was that healthy. I can make a big batch of these and freeze some of them. Again, I’ve been using Cooks.com or Allrecipes.com for these. If you have a delicious, healthy granola bar recipe please share it with me! As a side note, I’ve also heard plain, homemade granola is really good too. I want to make some of that as well.

4. Homemade Smoothie Pops.

I made these a few weeks ago and they were a hit!

5. Homemade Muffins.

Again, I try to make these with whole wheat flour, flaxseed and blueberries. We like corn and bran muffins too. There are some good recipes online too. I’m still in search of the one I like best.

6. Taco Meat.

I want to start precooking and freezing taco meat in bulk since we love tacos around here. If I keep several cans of refried beans and tortillas on hand that’s a simple and easy meal on weeknights and especially for weekends when we’re most tempted to eat out.

7. Homemade Calzone.

I make a super easy calzone. I make the dough in my bread maker and then roll it out. I then cook up ground beef and mix it with cheddar and mozzarella cheese. I lay the mixture on one side of the dough and then fold over the other side of the dough and pinch the edges. Then I bake it at 350 degrees until it looks done. I know this version doesn’t sound very healthy so I’d like to modify it a bit (Adding tomatoes, onions and mushrooms maybe?). Although, I’ll probably be the only one to eat that one. I want to make a couple of these and freeze them. Can I freeze them unbaked? Does anyone know?

8. Oatmeal Cookies.

I really want to find a healthy(er) oatmeal cookie recipe to make. (Sans raisins since we don’t like them in baked goods). I think that would also make a great snack and dessert. Mike loves them.

9. Fajita Chicken.

Another meal we love. I want to make it in bulk and freeze smaller portions so it’s ready to go on a weekend when mealtime rolls around and I don’t feel like cooking. (Thanks to Kathy at House Of Hills for this idea.) I love it with peppers, mushrooms, onions and avocado. Mike and the girls will only eat them with chicken and cheese. We’re going to have to work on that…..

    They all sound great! I make a lot of muffins in bulk, and granola bars too. I love granola & granola bars and love making them at home, knowing they don't have yucky ingredients. Good luck!

    I always bulk bake pancakes and waffles. They are just so easy to pop in the toaster on a busy morning.

    I'm still working on freezing stuff and am nowhere near cooking once a month (though that sounds really cool), but right now I have chicken spaghetti, lasagna, and brisket all precooked and frozen in my freezer. I didn't set out to do that, but we had leftovers after each meal and we're really bad about eating leftovers, so I just froze them all. There should be atleast enough of each for one more meal for the family.
    I like all of these ideas though. I'm definitely going to make that calzone. I kind of think you would need to cook it before freezing it, but that's just my instincts, I don't know that would be true. I'm just not sure what the dough would do with everything inside it when you freeze it, uncooked. But I would say you should try it and just see. It would be nice to not have to cook before and then just cook it when you're ready for it. Great ideas!

    Whenever we make waffles we make a big batch and freeze them. They taste great re-heated and are an easy breakfast! I have a good recipe for crunchy granola bars if you're interested. It's on my computer at home so I'll try to remember to send it to you :-)

    I need to do muffins, too. Homemade. Ahem. :) What I cook in bulk most often, though, is browning ground beef. Lots of it, frozen in 1-lb containers. Makes dinner a breeze!

    I agree about the dough. I just thought maybe it would taste fresher if I didn't freeze it once it was already cooked!
    I'll have to make brisket sometime. I don't know how so I'll have to learn. Is that something I could make in the crockpot? I know, very UNsouthern of me to not know this!

    Yes! I want to simplify our meal times a little more. It requires more work up front but if I can get started with this I think it will be worth it in the long run.

    Haha Well, I'm not a good Texan because I really don't know how to do brisket. Down here, you can buy the meat already cut up and seasoned. I do cook mine in the crock pot though, and I just add some BBQ sauce and water to it to keep it tender while cooking. But the pros who do it regularly have a smoker and they smoke brisket for long periods of time. I wouldn't even know where to begin if I started with one from scratch and had to smoke it.

    I love making choc chip cookies (half whole wheat flour) and freezing them. I almost like them better out of the freezer. In my experience, waffles freeze much better than pancakes — we never have any trouble finishing the double batch of pancakes in a few days. I've never tried freezing granola bars/ granola. Hmmm. Here from top 10.

    I'm still working on a faster way to do this, but it has made life so much easier! The thing I probably make the most is chicken since we eat A LOT of it. I mix up different marinades and put the chicken in, then freeze. When it's dinner time I just have to stick it in the oven for 30 minutes. I like the idea of granola bars though. I might have to try those next time.

    Pancakes, pancakes, pancakes! My kids think breakfast=pancakes. I make cinnamon, banana, blueberry and strawberry. Oh, yum!!

    I hope you can start cooking and freezing. Grandma Ross used to do that when they lived in Brasil. I did it some, but not often enough when you all were still at home. I think it's a great idea! Happy cooking and baking……it all sounds wonderful:)

    Yum! We're having chicken fajitas for dinner tonight and I always make large batches to store in the freezer.

    I'm a huge fan of cooking in bulk as it saves lots of time and money.

    Hmm..cinnamon and strawberry? Sounds good. Do the strawberries hold well? I know that probably sounds like a dumb question. I keep picturing really mushy strawberries. My girls would definitely love cinnamon!

    When you mix the marinades to you freeze the chicken and the marinade together. I keep hearing about this but never understood if the marinade freezes with the chicken or if you marinade first and then freeze the chicken after dumping the marinade. Thanks for the input!

    I have to puree the strawberries. Even a sliced strawberry doesn't work well. But when I do a fruity pancake, the kids don't even use syrup! YUM.

    Ok! I'll definitely have to try that. I'll bet the pancakes get a little pinkish, which my girls would think is awesome. And not having to use syrup all the time would be great too.

    hi melissa! fun post. i'm cooking and freezing a lot of food these days but it's all for eva.

    just wanted to say that if you do find a granola bar you love, please pass the recipe on to me! we can't buy them here and i also keep trying to find a good recipe. the healthy ones seem to fall apart. the unhealthy ones taste delicious but are really just dessert…

    also wanted to say that you can definitely freeze an unbaked calzone. you'll find that both the dough and the cheese are nicer that way. when you want to bake one, just thaw it out ahead of time and then bake it as you normally would. i haven't done this with calzone specifically but do it with chicken/beef pot pies and pizza regularly. have fun!

    I freeze them both together. That seems to be the fastest way for me and it helps have more meals frozen with less cooking since they're usually fast and easy to put together.

    Thanks for the info, Phoebe! I just made some granola bars but haven't tasted them yet. Their from the link from Heavenly Homemakers listed in the comments here. Really easy to make and no baking. Just chilling. I can already tell they will be chewy. Hopefully not so chewy they won't stay together! They do include peanut butter (or any nut butter you like) so if you don't want peanut butter all the time this recipe isn't for you. If I don't like these I'll be trying the recipe for Kitchen Steward ( link to the recipe is in #3 above). Those seem a little more complicated and seem to be crunchy.
